Sample dishes include: White Asparagus atop Frisee with a farm fresh poached egg and Black Truffle Hollandaise; Winter “Fowl” Terrine, a gamey mix of organic chicken, quail, duck, squab, pheasant, and foie gras, served with currant jelly; Five Peppercorn Crusted Salmon with caramelized cipollini onion, toasted black and white sesame seeds and carrot-ginger butter; Roasted Loin of Venison, crusted with fennel pollen and juniper seeds, served with chestnut flan with a Wild Maine Blueberry grappa sauce.Location
